Blackberry Cobbler


Blackberry Cobbler

INGREDIENTS for Crust Layer:

1 cup evaporated milk
1 cup flour
3 teaspoons baking powder
1 cup sugar
1 teaspoon vanilla
Pinch of salt

INGREDIENTS for Blackberry Layer:

1 Tablespoon cornstarch
1/2 cup boiling water
3/4 cup sugar
3 cups blackberries (fresh or frozen)
Butter
Cinnamon

TO PREPARE Crust Layer:

Mix Crust Layer ingredients together well. Pour into a 9 x 12 inch greased pan.

TO PREPARE Blackberry Layer:

Mix together blackberry layer ingredients. Pour slowly into middle of cobbler batter, dot with butter and sprinkle with cinnamon. Bake in 350 degree oven for 45 minutes.

Note: The fruit goes to the bottom with a golden cobbler on top.

SERVES: 8
