COQUITO (COCONUT COCKTAIL)
Makes 2 bottles/750 ML each.
Simmer 8 cloves, 3 large cinnamon sticks, 6 star anise, and 2 cups of water in a saucepan on low heat until essence of spices are released. Then strain liquid only.
Mix strained liquid, 750 ML rum, 8 oz. coco lopez, 8 oz. coconut milk and 8 oz. condensed milk with a blender.
Once all these ingredients are blended. Pour into a pitcher or glasses that have been chilled and serve. No refrigeration is needed. Mixture has a one week shelf life. Drink and enjoy.
