Margarita Beef with Orange Salsa
South of the border comes north.
Prep: 30 minutes
Refrigerate: 4 hours to overnight
Cook: 22 - 26 minutes
Servings: Serves 6
1 1/2 lbs. well trimmed beef top round steak, cut 1-inch thick
2/3 cup frozen orange juice concentrate, thawed
1/2 cup tequila
1/3 cup fresh lime juice
2 Tbsp. olive oil
2 Tbsp. chopped fresh ginger
2 medium cloves garlic, crushed
1 tsp. salt
1 tsp. dried oregano leaves
1/4 tsp. ground red pepper

-- lime wedges
-- Orange Salsa

Combine orange juice concentrate, tequila, lime juice, oil, ginger, garlic, salt, oregano and red pepper. Place steak in plastic bag; add marinade, turning to coat. Close bag securely and marinate in refrigerator 4 hours to overnight.
Remove steak from marinade; discarding marinade. Place steak on grid over medium coals.
Grill 22 to 26 minutes for medium rare (150°F) to medium (160°F) doneness, turning once. Remove steak to carving board; let stand 10 minutes.
Carve steak crosswise into thin slices; arrange on serving platter. Garnish with cilantro and lime.
Serve with Orange Salsa.
