Mediterranean Goat Cheese Spread
Prep time: 15 - 20 min
Serves 10 - 12
3 logs - 3.5 ozs. ea. - goat cheese
1/4 C marinated sundried tomatoe halves - chopped
1/4 C pitted Kalamata olives - chopped
2 TBSP small capers, drained
1/4 /c EVOO
1 tsp fresh minced garlic
1/2 C sliced almonds
2 TBSP fresh chopped basil
1 loaf french baguette, thinly sliced
Crumble goat cheese over serving plate. Layer tomatoes, olives, capers over cheese and set aside.
In saucepan, heat EVOO and saute the garlic until it is lightly toasted.
Pour hot EVOO/garlic over the cheese layers. Sprinkle with almonds and basil. Serve with bread slices.
