Shirred Eggs
from the Houston Junior League Cookbook

INGREDIENTS:
1 slice bacon
1 teaspoon bacon drippings
1 egg
1 teaspoon milk or cream
1 teaspoon butter
Salt and pepper
2 small salted crackers
Paprika
TO PREPARE:
Fry amount of bacon needed until almost done. While bacon is still limp, line teflon muffin cups with 1 slice bacon each. For each cup add bacon drippings and carefully break in 1 egg. Top each egg with milk, butter, salt and pepper. Crumble crackers over all and sprinkle with paprika. Bake at 350 degrees for about 15 minutes, or until egg whites are set and cracker crumbs toasted. Shirred eggs are ideal for house guests because they can be stored overnight in the refrigerator and baked quickly the next morning. Serve 1 shirred egg per person.
