Shrimp in Sour Cream
INGREDIENTS:
1/2 cup butter
2-1/2 pounds raw shrimp, peeled and deveined
2 shallots, minced
1/2 pound mushrooms, sliced
2 Tablespoons all-purpose flour
1 teaspoon salt
freshly ground black pepper
2 cups sour cream
1/4 cup dry sherry
TO PREPARE:
In a large frying pan, sauté shrimp and shallots in butter for five minutes or until shrimp are pink. Add mushrooms and cook five minutes longer. Blend in flour, salt, and pepper. Gradually add sour cream, cooking and stirring until thickened. Remove from heat and stir in sherry. Serve over rice or toast points.
