Spaghetti with Garlic and Olive Oil
If you assemble all the ingredients while the water boils, dinner will be ready in the amount of time it takes to cook the pasta!
1 (12-oz.) pkg. spaghetti
1/3 cup plus 2 tablespoons extra-virgin olive oil, divided
4 to 6 garlic cloves, minced
1/2 teaspoon crushed red pepper
1 tablespoon minced fresh Italian parsley
1 teaspoon minced fresh oregano
1 teaspoon minced fresh thyme
Dash salt
Dash freshly ground black pepper to taste
1. Cook spaghetti in large pot of boiling salted water according to package directions; drain. Place in shallow serving bowl.
2. Meanwhile, heat 2 tablespoons of the oil in small skillet over medium-low heat until warm. Add garlic; cook 3 minutes or until garlic just begins to soften. Stir in crushed red pepper; remove from heat. Stir in remaining 1/3 cup oil.
3. Pour garlic mixture over spaghetti. Add parsley, oregano, thyme, salt and black pepper; toss gently.
