Spicy Beef Tri-Tip
Heat up the grill...not the kitchen.
Prep: 5 minutes
Cook: 35 minutes
Servings: Serves 6-8
2 lbs. boneless beef tri-tip
1 Tbsp. chili powder
1 1/2 tsp. ground cumin
1 tsp. salt
1/2 tsp. cayenne pepper
1/4 cup cilantro, chopped

Combine chili powder, cumin, salt and pepper. Rub seasoning mix over surface of tri-tip.
Grill 30 to 35 minutes, or until internal temperature registers 135°F, turning once.
Remove tri-tip; tent with foil (internal temperature will continue to rise 5 to 10 degrees). Carve into slices and garnish with cilantro. Serve with your choice of salsa.
