Steamed Nicoise Salmon
3 T extra virgin olive oil
1 T lemon juice
3 T chopped oregano, fresh if possible, divided
2 garlic cloves, finely minced
¼ t salt, divided
¼ t freshly ground pepper, divided
1 (1 ½ lb) salmon fillet
½ lb. green beans
½ small red onion, thinly divided
¼ C pitted nicoise or Kalalmata olives
1. In a small bowl, whisk together oil, lemon juice, 2 T of the oregano, garlic, and ⅛
t each of the salt and pepper.
2. Brush top and sides of salmon with 1 ½ T of the oil mixture. Sprinkle with the remaining ⅛t each of the salt and pepper.
3. Spray steamer basket with nonstick cooking spray. Place in large wide pot or Dutch oven. Fill with water to just below basket. Bring to a boil over high heat. Place salmon and beans in steamer basket over boiling water. Cover and steam 2 minutes. Add onion; cook an additional 2 minutes or until salmon just begins to flake.
4. Place salmon, beans, and onion on serving platter. Drizzle with remaining oil mixture. Sprinkle with olives and remaining 1 T oregano.
