Fancy Peanut Soup
Ingredients
1-1/2 cup peanut butter
1/2 teaspoon vegetable seasoning
1 quart chicken stock
3 Tablespoons peanut butter
1/2 cup peanuts, chopped
1 quart milk
1 onion, chopped
2 celery ribs, chopped
3 Tablespoons flour
1/2 teaspoon salt
freshly ground pepper
In a pan over low heat, soften the peanut butter to allow for easy mixing with the milk. Add milk, salt, pepper, and vegetable seasoning. Bring to a boil and then set aside. Sauté the onion and the celery in butter -- do not allow to brown. Stir in the flour, as if making a gravy. Add the chicken stock and stir constantly until mixture comes to a boil. It saves time and elbow grease if the stock has already been brought to a boil. Remove from heat. Combine with the peanut butter and milk mixture. Return to the stove and over a very low heat cook until all ingredients are well blended. The soup may be served either cold or hot. After ladling the soup into the individual bowls, sprinkle the chopped peanuts over the top for decoration.
