Dijon Hollandaise Sauce

Makes: 1 cup
1/3 cup cholesterol-free egg product
2 Tbsp. lemon juice
1 Tbsp. GREY POUPON Dijon Mustard
Dash ground red pepper
1/2 cup (1 stick) butter or margarine, melted (hot)
PLACE egg substitute, juice, mustard and pepper in electric blender container; cover. Blend on medium speed. With motor running, remove lid and slowly add hot butter in fine steady stream until butter is incorporated and mixture is smooth.
MIXTURE can be held in top of double boiler over hot (not boiling) water for up to 10 minutes before serving.
