German Sour Beans

INGREDIENTS:
1 pound fresh pole or string beans
1 cup sour cream
1 cup minced onions, divided
3 strips bacon
1/4 cup vinegar
Salt and white pepper, to taste
TO PREPARE:
String beans and cut diagonally. Cook 30 minutes in boiling salted water; drain. Combine beans, sour cream, and one-half cup onion; set aside. Fry bacon, drain, and crumble; reserve drippings. Saute one-half cup onions in drippings until transparent. Add vinegar and bring to a boil. Remove from heat, cool slightly, and add bean mixture, salt, and white pepper. Sprinkle crumbled bacon over the top before serving. May be served hot, at room temperature, or cold.
NOTE: Vidalia onions or other sweet onions are best.
