Vinegar Eggplant
Slice and salt eggplant overnight. Squeeze out the moisture before adding vinegar. Set aside for 1 hour before squeezing moisture. Add oil, oregano, and sliced garlic to taste. Put in jars, add more oil to cover and seal.
